'Pays de Cocagne' ; name given to this region, spanning the Albi, Toulouse and Carcassonne triangle, "pain" de pastel or "coque" (cocanha in occitan).
This plant was used for dying cloth in shades of blue during the XVth and XVI centuries bringing economic success to the region of which Toulouse was the capital.
Situated in-between the Albigeois and the Lauragais, Lavaur is set in the heart of the 'Pays de Cocagne'. It is one of the oldest cities in the Tarn and was a Cathar stronghold in the XVIIth century.
You will visit the 'St Alain' cathedral (XIIIth century), The organ with its casing. A wooden statue (XVIIth century) in one of the towers automatically rings the bell on the hour.
